Fish Tacos on a Wednesday

Hey, love cats! I have a confession…

I’m addicted to Pinterest. It’s true. It’s undeniable. It’s a sickness. I will never be able to recreate, DIY, build, cook or anything else that I’ve pinned in my lifetime. It is just impossible.

But I’m going to try 🙂

I’m going to link all of the recipes I used down below! They were the inspiration for my culinary adventurous Wednesday.

I was bad and I didn’t follow the recipes exactly. I’ve kind of always cooked that way. Things usually work out for me, but there have been some really bad experiences in the kitchen :/ So if you’d like to follow the recipes, just click the links above and they will walk you through everything (not like me, who’ll encourage you to just wing it.)

I started out first with the Cilantro Lime Sauce.

May I just say, I’ve never purchased fresh cilantro before in my entire life. Like before yesterday, I don’t think I could have told you what fresh cilantro looked like. I’ve also never purchased fresh jalapenos. I feel like a new person, a learned, more experienced person.

Because cilantro is life changing.

What I used:

  • 1/2 cup of mayo
  • 1/2 cup of sour cream
  • 1/2 cup of cilantro, chopped
  • 1/2 fresh jalapeno, de-seeded and chopped
  • a pinch of chili powder
  • a pinch of oregano
  • 1 lime, squeezed
  • a pinch of cumin
  • a pinch of dill

Here’s where I deviated from the recipe:

  • Instead of Greek yogurt, I used sour cream.
  • I didn’t add any olive oil.
  • I added the jalapeno (because I’m southern and we like the spicy stuff)
  • I added the oregano, cumin and dill

And it turned out GREAT. Like two thumbs up all around. No complaints in the house.

I made an absolute mess in my kitchen, but I sure did have fun.

To blacken the fish (I used tilapia, btw), I used:

  • Lime juice
  • Minced garlic
  • Chili powder
  • Cumin
  • Paprika
  • Cayenne Pepper (oh yes)
  • Salt
  • Pepper
  • Brown sugar (deviation from recipe)

I followed the recipes fairly closely for the corn and bean salad and the rice.
